Early pool closing has a lot to do with potential liability and alcohol. It is not to force people into the casinos, but it is to try to limit drunken rowdiness at the pools after dark.

Re: Drinks at Luxor pool? You can take your own alcohol into any pool as long as in plastic cups / containers. I usually get a large slushie drink on day 1 and then use this to take in any drink I may want.
Bring all you want into your room. As for airlines, you can carry on but may not open and consume on the plane. I recommend either put your bottles in your checked baggage, try and find plastic if available.
